Gather all needed materials + ingredients before you start.

Step 1

Prepare the chocolate ganache

Heat the heavy cream and pour it over the semi-sweet chocolate chips. Let it sit for about five minutes then mix with a spatula until fully melted. Cover with saran wrap to contact and chill in the fridge until the macaron shells are ready.

Step 2

Making the meringue

I typically use my hand mixer for this recipe but a stand mixer works great as well.

Whip the egg whites at medium speed until frothy then add the granulated sugar a little bit at a time. Once all the sugar has been added increase the speed to high and whip until you reach stiff peaks.

Step 3

Making the macaron batter

Add half of the sifted almond flour and powdered sugar into the meringue and fold.

After that is combined add the other half, white food coloring, and fold until you reach a smooth flowing batter.

Add four drops of food coloring in the batter and create a marble effect with a tooth pic.

Pour the batter into a piping bag fitted with a round tip.

Step 4

Piping & Baking

Piping the heart macarons is the fun part! Use a template under the parchment paper or pipe the macarons onto a silicone baking mat with a heart template on it.

As you pipe the macarons visualize that you are writing the letter V with the macaron batter. I use a circle silicone mat under my parchment paper and pipe a V shaped macaron while staying inside the circles.

Let the macarons rest for 15 minutes then bake in a preheated oven (300 F, 150 C) for about 16-18 minutes.

Step 5

Decorating & Assembling

Once the macarons are cooled down remove them from the parchment paper and pair same sized hearts together.

Write a lovey phrase on the macarons using edible food markers or by diluting “Red Rose” master elite with The Color Solution by The Sugar Art.  This creates an edible paint to write on the macarons with a fine tip brush.

At the time I made these macarons Kali Uchis released her album “Orquideas” I felt inspired by the album cover and chose Lilac and Hot Pink as the colors for the marble effect. I wrote song names from her new album on the macarons.

After you have written your phrases on the macarons, fill them with the chocolate ganache.

Notes on the chocolate ganache: Bring the ganache to room temperature and then transfer to a piping bag to pipe on the macarons.

Store the macarons in the fridge to mature or package them in a cute box for your valentine! 🙂

Ingredients

  • Almond flour 100 g

  • Powdered sugar 145 g

  • Granulated sugar 85 g

  • Egg whites (aged) 85 g

  • Chocolate ganache
  • Semi-sweet chocolate chips 150g

  • Heavy whipping cream 80 ml

Directions

  • Weigh out all needed ingredients and prepare all needed materials

  • Heat the heavy cream in the microwave and pour over the chocolate to melt. Combine well, cover to contact with saran wrap, and chill in the fridge.

  • Sift almond flour + powdered sugar together and set to the side

  • Add the egg whites to large bowl with a pinch of salt. Whip on medium speed and when they look frothy start adding the granulated sugar a little at a time, whipping in between each addition.

  • Once all of the sugar has been added increase the speed on the mixer and whip until you reach stiff peaks.

  • Add half of the dry ingredients and white food coloring to the meringue. Fold until just combined and add the other half of dry ingredients. Fold until you reach a smooth batter that falls off the spatula in a ribbon like form.

  • Put 2 drops of Lilac and 2 drops of Hot pick food coloring and swirl in the batter using a toothpick. Transfer the batter to a piping bag fitted with a round tip.

  • Pipe hearts by visualizing that you are writing a letter V with the macaron batter. It may be easier for you to use a heart template under the parchment paper or use a silicone mat that comes with a heart template.

  • Let the macarons rest for 15 minutes then bake in a preheated oven (300 F, 150 C) for 16-18 minutes.

  • When the macarons have cooled remove them from the parchment paper and pair same size hearts together.

  • Write lovey phrases on the macarons using edible food coloring markers or by diluting powdered food coloring with The Color Solution to create an edible paint.

  • Let the chocolate ganache come to room temperature then place it in a piping bag to fill the macarons.

  • Store the macarons in an airtight container  to mature or package them in a cute box for your Valentine.
